Chef Morataya is the current owner of Panga hotel in Panama. The hotel is a farm-to-table type of a restaurant. The chef, who also dubs as the proprietor, focuses on developing a greater dining experience that stretches beyond what is offered on the tables. However, it is important to note that Morataya has faced numerous challenges in the past. When he started the business, he was short of money and could not immediately necessary materials that he was required to buy. But, one factor you should note is that Morataya never gave up, his constraints served as some of his motivation. He focused his time and attention on developing a new technique of cooking. He calls this conventional technology as a back to basics form of preparing a meal.

Even at his home, Morataya has created a success story from scratch. And with the level of hard work and determination to succeed, he will be signing a different concept known as the Nihi Sumba cooking. The brand, to be owned by Chris Burch will have its headquarters in Indonesia. Unlike most people who have taken automation of various tasks that they discharge, he has decided to limit the extent of machines uses in the baking industry. He believes that investing much on an excellent human resource ensures that clients do not seem quite strange whenever they are eating. While setting up his trade, Andres never had sufficient funds to put up his outdoor cooking business, and so he settled for the farm-to-table restaurant approach. It is in October that Andres Morataya plans to take his technique to the Indonesian resort of Nihi Sumba Island that is particularly owned by Chris Burch. Although Chef Andres can now afford to purchase all manner of cooking equipment, he prefers to stick to his handcrafted grill made from bricks and driftwood.
